Freeze!

Today is the first day of school.  Early in the summer I had this great idea... before school started again I'd stock our freezer with prepped meals.  Even if we used one a week, it would be one less night of cooking and cleaning.  Also, since it is just the two of us most meals make enough to provide leftovers for lunch.  Having the meals ready to go might be useful for entertaining and food gifts (illness, babies, etc.) as well.

I did some online research to find recipes that freeze well. Then we did a major shopping trip to B.J.'s....that was followed by the classic Leigh mistake.  "Oh,this will be great, fun and fast.  I'll get it done while John's at the baseball game."  HA! Four days later and our freezer was filled! Oh, and I literally had a blister on the outside of my pointer finger from all the chopping.


                                             


 I used disposable containers and labeled them with cooking instructions, so I wouldn't have to look up the recipe.  The bags below hold crock-pot meals, so they just need to be dumped and heated.
 
I stopped taking pictures after the first day.

This is awesome! Thanks for all the links. There are a few I want to try. I did this last summer and it was really handy, but a ton of work. I also made some things that I never actually ate. Which is really silly. =) I've thought about trying to do this in smaller portions, but doubling ingredients while I'm making a dinner to make a freezer meal. That's probably more realistic for me. =)
