Food For Thought

This weekend some new neighbor friends are coming for dinner and games.  While I love entertaining, I'm a bit stumped on this one.  One of our guests is vegetarian.  So now I'm not sure what to serve.  My sister is vegetarian but we tend to use meat substitutes or she makes her own vegetarian entree.

Sarah Buckley

That doesn't feel formal enough for this.  Not that it is a formal dinner party- I'm so not formal, I mean our wedding reception was at a (fun and nice) bar.

Yes, I could do some sort of pasta dish but I feel like that is old and over done.  Now the other part of this equation is I'm a pretty picky eater. So dishes with rice, beans, stir-fry, mushrooms, etc. aren't an option.

If you were hosting my guests what would you make?  Thanks for the help.

How about a hearty soup(minestrone or tortellini or such) in the crockpot and bread in the bread maker? Both will smell great when your neighbor friends come in the door...and are comfort food in the cold winter weather.

Cheese enhiladas and mexican rice? Vegetarian lasagna? I made these cheesy bowties the other day and they were very good: http://cookingoncloverlane.blogspot.com/2010/02/cheesy-bow-ties.html

Come to think of it, I've never gone wrong with anything on that blog. Here's the link to her meatless recipes: http://cookingoncloverlane.blogspot.com/search/label/Meatless%20Mains

I think pasta is a great bet. And, I agree with your mom, too. Minestrone with bread sounds yummy!

And dessert? =)

I know from the past that you have a fondue set. Yummy cheesey fondue with great breads, veggies, and even some chicken for the non-veg eaters. It will make a hit! Oh, and don't forget to make your yummy apple pie!
