Snow Day Bake-Off

I was lucky enough to have a snow days last Thur. and Fri.  While I did about 6 hours of work, because I'm a dedicated teacher, I also spent a fair amount of time lounging in my pjs while watching movies, and surfing blogs (found some great new ones).  While clicking-around I stumbled on two tasty looking cake recipes.  So without pausing to think, "I have no idea for two large cakes, especially when snow-stuck", I made them.

Number One ~ Applesauce Cake via Erin 



Clearly a Monkey Bread pan is not the same as a bunt pan.  The cake was good, not too sweet kind of like a spice or carrot cake.  I think it would be good for a brunch.  My slight recipe changes- since I didn't have chunky applesauce, I used 1 cup cinnamon applesauce then 1 cup apple butter (did you know in the South apple butter doesn't actually have butter in it?).

And for the recorde this is why I don't show many pictures of my cooking
it isn't pretty.

The blogger of this next recipe does a great job of taking "pretty" baking photos.  I don't have the patience.

This one was good, but maybe because we didn't grow up with TastyKakes but we found it too rich and heavy.  Almost too hard to eat at room temp.

So what, do you ask, did I do with all that cake?  Well some of the Applesauce cake became Snow Day cake I shared at school on Fri.  Then half of the Peanut Butter cake went, with slices of Applesauce cake, to our neighbors.

I totally want to make that peanut butter kandy kake. I have to wait awhile though because I'm still on a bit of a sweet overload.
