Citrus Chicken

I'm a huge fan of Shake and Bake chicken (with mashed potatoes, of course) for dinner.  But I also get bored easily.  In an effort to mix things up a bit, I tried this last week- Sweet Citrus Chicken.  It isn't as good as S&B, but good enough.  

I halved the repeice and we still had enough to both bring leftovers for lunch the next day.

1 2/3 cups hot water

6 oz. of stuffing- the recipe says Stove Top stuffing mix for chicken- but I used Pepperidge Farm because that is what I like (and had)

2/3 cup OJ

1/3 cup firmly packed brown sugar

3 Tbsp. butter melted

***I added a little fresh lemon juice too 

1. preheat oven to 400

2. add hot water to stuffing, stir just until moistened- set aside 

3.put chicken in 13x9 baking dish

4. mix oj, sugar and butter until well blended

5. pour over chicken

6. top with stuffing

7. bake for about 30 min

~you know who you are- can you handle this?  It is easy...promise!

Wow, I probably could handle that! haha. Of course I can take any recipe and somehow turn it into some difficult...
